Tomato Sauce
Notes
- Use fresh spices and herbs for a better taste
- You can skip the sugar if you simmer the sauce for long enough
- If you use olive oil as the base make sure it doesn’t burn when cooking the tomato paste
- If you use whole tomatoes you will need to simmer longer, and chop them first

- 1 hour simmering
Ingredients
- 3 tablespoons tomato paste
- 1/2 cup oil
- 5 cloves garlic, chopped
- 1 spanish onion, chopped
- 2-3 kg or L of tomatoes (crushed, pureed, or whole)
- 1/2 cup vegetable broth
- 1 1/2 tablespoons freshly ground black pepper
- 1 tablespoon oregano
- 1 tablespoon sage
- 1 tablespoon basil
Directions
- Saute onion in oil for 5 minutes, when it becomes translucent add garlic
- Add tomato paste & black pepper. Fry for 10 minutes. Deglaze with vegetable broth
- Add tomatoes and herbs, simmer for an hour
- Add salt and sugar to taste, optionally add parsley
