Chocolate Chunk Cookies

- Use mass while measuring flour
- Chia can be ground or whole

Ingredients
- 1 cup vegan butter or margarine
- 1 cup sugar
- 1 cup packed brown sugar
- 2 Tbsp chia seeds + 6 Tbsp water
- 2 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp hot water
- 1/2 tsp salt
- 3 cups (450g) flour
- 2 cups semisweet chocolate chunks
- 1 cup walnuts
Directions
- Preheat oven to 350 degrees F.
- Add 2 Tbsp chia with 6 Tbsp water and let sit in a small bowl.
- In a new bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in the chia, then stir in the vanilla.
- In the old chia bowl, mix baking soda and hot water. Stir, then add to the rest of the mixture along with salt.
- Stir in flour by folding the mixture, part way through add in chocolate chunks and walnuts.
- Use a spoon to drop as lumps onto an ungreased pan. Bake for 10 minutes, or until edges are brown.
