Chocolate Cake
Notes
- This cake is very fudgy. It is safe to err on the side of undercooking it.
- Do not overmix the batter.
Serves: 2 9” cake pans

- 25 mins baking
- 10 mins cooling
Ingredients
- 2 cups (440g) white sugar
- 1 3/4 cups (225g) all purpose flour
- 2 tbsp chia seeds & 1/3 cup water
- 3/4 cup (90g) good quality, unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup plant milk
- 1/2 cup vegetable oil
- 2 tsp vanilla
- 1 cup boiling water
Directions
- Preheat the oven to 350°F (175°C) then grease & flower two 9 inch cake pans. Get some water boiling
- In a small bowl, mix chia with water. Set aside.
- In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt.
- Add the chia, plant milk, oil and vanilla. Mix until just combined.
- Stir in the boiling water. The batter will be thin. Pour it in to the cake pans.
- Bake 25-30 mins, or until a toothpick comes out clean.
