Apple Squares
Notes
- Use mass or weight while measuring sugar and flour
- Aquafaba (chickpea water) is optional
- Baked bars should spring back when lightly touched

Ingredients
- 125g (1 cup) flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/4 cup melted imitation butter or oil
- 150g (1/2 cup packed) brown sugar
- 100g (1/2 cup) white sugar
- 1 Tbsp ground chia
- 3 Tbsp aquafaba (can sub with water)
- 1 tsp vanilla
- 1/2 cup chopped apple
- 1/2 cup chopped walnut
- 2 Tbsp white sugar
- 2 tsp cinnamon
Directions
- Preheat oven to 350 f. Grease a 9x9 inch pan
- Grind chia and mix in aquafaba (or water) and set aside
- Sift & mix together flour, baking powder, salt, and 1/4 tsp of cinnamon. Set aside
- In a large bowl, mix together melted “butter”, brown sugar, and 100g (1/2 cup) white sugar until smooth. Stir in chia and vanilla
- Add in flour mixture, mix until just combined. Mix in apples and walnuts
- Spread in to pan, and sprinkle remaining cinnamon and sugar over it
- Bake for 25-30 minutes. Let cool in pan.
